A Murderer's Apple Tart

Vincent Price: when ever he was in a movie, you were sure someone was going to "go". He would wall them up, or strangle them, and often lose his mind after.

He made his fortune doing these parts, but also, with co-authorship with his wife, Mary, he compiled a fabulous cookbook, published in 1965.

What follows is one of my favorites from that volume:

Vincent Price's Apple Tart
Tart shell:
1 1/4 cup flour
4 tablespoons sugar
1 stick (1/2 cup) unsalted butter;
sliced
Pinch salt
2 egg yolks
Grated rind of one lemon
Filling:
3 cooking apples
Apricot preserves

Sift flour on pastry board, make well in middle. Place sugar, yolks, salt and butter in well. Mix those ingredients to paste, knead in flour, form into ball, chill 30 minutes

Roll out 2/3 of the pastry and place in an 8-inch pie shell.

Core, pare and slice apples very thinly, spiraling the slices from the center to the outer edge. Spread surface of the apples with 12 oz of apricot jam which has been sieved.

Roll out rest of the pastry, cut in strips to form a lattice top on filling by weaving strips beginning at an edge with strips at 90 degree angles, leaving small squares between strips.

Bake in 400 degree oven for 15 minutes, then reduce the temperature to 350 degrees for 30 minutes or longer till apples are tender.

Remove from oven and sprinkle with confectioner's sugar. Serve warm

The following was served at the Northfield Historical Society's pot luck dinner with a dab of whipped cream on top!

Swedish Apple Pie
From Tracy DeFelice, Northfield

Fill a greased pie pan 2/3 full
of sliced apples (4-5 large
apples)
Sprinkle over apples a mixture
of cinnamon and sugar
Mix together the following batter

1 cup sugar
1 cup flour
1 egg
1 and 1/2 sticks of melted butter

Pour this batter over the apples (it will be thick)

Bake at 350 degrees for 40 minutes or until golden brown

This is so good and not a calorie in it!!(B DeFelice)

Apple Kuchen

This comes from Joan Fitzhugh's family collection. Her notes are included. It may be halved..
4 cups flour
4 teaspoons baking powder
1 teaspoon salt
1/4 cup sugar
Sift dry ingredients together
1 and 1/2 cups shortening,
butter or combination
Cut shortening into the flour
mixture
2 eggs
1 and 1/3 cups milk

Mix eggs and milk together then add to flour, this makes a sticky dough.

Peeled, cored, sliced apples (into wedges)

How many apples depend on how big they are. I start with 2

Spread dough into pan. Stick apples, thin edge of wedge into the dough. I make rows of apples down the length of the pan.

Sprinkle with 1/2 cup sugar and 1 and1/2-2 teaspoons cinnamon.

Bake 40-50minutes at 400 degrees in a 9x13 greased pan. This recipe is doubled. Half recipe fits a 9x9 or 8x8 pan.
